Coleslaw And Its Many Tempting Variations

Jalapenos And Pineapple? Mix It Up A Bit And Be Creative.

Creamy and cool coleslaw is a perfect side dish for all those great summer foods such as hamburgers, pulled pork sandwiches, grilled chicken, hot dogs – pretty much anything grilled.

According to Wikipedia, the term "coleslaw" arose in the 20th century as an Anglicisation of the Dutch term "koolsla," a shortening of "koolsalade," which means cabbage salad.

The basic recipe is so easily customized to fit your own tastes. It’s fun coming up with new variations of the tried and true. Be creative!

The basic recipe:

About 6 cups finely shredded green cabbage
1 cup shredded carrot
½ onion, grated

Dressing of: ¾ cup mayonnaise, 2 T vinegar, salt, pepper, dry mustard and celery seed

Combine dressing ingredients well and mix in to cabbage as needed.  Stir well and refrigerate several hours or overnight for best flavor.

 

Variations:

The best part is adding a mix of some favorite ingredients to make it your own signature dish.

Try the following add-ins for vegetables: shredded or diced red cabbage, radicchio, broccoli, green pepper, celery, pimento, scallions, radishes, tomato.

Unusual add-ins: pineapple, apple, mango, any type of nuts, sunflower seeds, raisins, jalapeños, green chilies.

Flavor boosters: chopped dill or sweet pickle, blue cheese crumbles.

In addition to or as a substitute for mayonnaise: plain yogurt, sour cream, buttermilk, Miracle Whip, oil and vinegar, French dressing or any favorite bottled dressing.

Other flavor enhancers: dry mustard, Dijon mustard, sugar, lemon juice, soy sauce

Herbs and spices: celery salt, poppy seeds, fresh or dried dill, basil, cilantro, parsley, chives
